I created a new recipe this afternoon for tasty snack bars made with nuts, seeds, and raisins. These would also be good for breakfast with a smoothie. The color of these bars is rich and golden brown. I’m kicking myself that I didn’t take a photo to post before I cut and wrapped all of the bars. Next time I make them, I’ll be sure to have my camera ready!
The first ingredient, almond flour, is just that: flour made from almonds. It is essentially just very finely ground almonds. I purchase Bob’s Red Mill almond flour from Whole Foods, although it may be available in other health food stores as well.
Almond Breakfast Bars
1 1/4 cups almond flour (also called almond meal)
Pinch of sea salt
1/4 tsp. baking soda
1/4 cup canola oil or melted coconut oil
1/4 cup honey
1 tsp. vanilla
1/2 cup each pumpkin seeds and sunflower seeds
1/4 cup chopped almonds
1/4 cup raisins or dried cranberries
Preheat oven to 400. Combine almond flour, salt, and baking soda. Separately combine oil, honey, and vanilla. Stir into the dry ingredients. Then stir in the seeds, nuts, and raisins.
Pat the mixture into an even layer in a greased 9-inch pie dish. Bake for 20 minutes or until deeply golden and fragrant! Cool completely. Cut into 12 wedges. Wrap each wedge individually in plastic wrap for a quick, on-the-go snack.
